I’d like to think I have the best of both worlds being a working mom. But I’ll admit, it can be tough at times – I literally don’t have a minute to spare. As soon as I get home from work, it’s straight to cooking, and then getting Sam and Zoe ready for bed.
Dinner time with the whole family, which used to be a time I looked forward to, has now become something I dread. I just don’t have time to think of any new recipes, and Sam and Zoe are sick to death of the same rotation of pasta, fajitas, or lasagna. It got to the point where even I was getting sick of my dinners, so I knew something had to change.
One day, Sam came home from a play date in his friend Dan’s house and couldn’t stop talking about the yummy pork chops Dan’s mom had made for them. I was surprised – I never thought Sam would like pork chops. But he loved it so much I said I’d get in touch with Dan’s mom for the recipe. That’s when she told me that she uses a meal planning service called eMeals.
So I decided to check it out. They had so many plans to choose from – quick and healthy, keto, low carb, budget-friendly, vegetarian, low calorie, kid-friendly, paleo, and more. You can always choose recipes from different plans in the same week, so you can get a great variety. I was definitely interested but was skeptical on whether the kids would like any of the recipes. But Sam liked the pork chops he tried, so maybe they weren’t as fussy as I thought.
How it works is eMeals plan your meals and send you recipes for each week, along with the full list of ingredients. You can edit your grocery list to add things you need or take away things you already have. You can even arrange to get them delivered right to your doorstep as they partner with Walmart, AmazonFresh, Instacart and more. Or, if you prefer to do your own grocery shopping, you can take the list they made for you to your local store.
I saw that their plans start at just $5 and they have a free trial, so I decided to bite the bullet and sign up. I had nothing to lose. I went with the quick and healthy plan and arranged to get the groceries delivered.
I scheduled the groceries to arrive Monday night and they arrived right on time. I could use the eMeals app to follow the recipes, which were super easy and clear to follow. First up was Cheesy Baked Pasta with Kale and Mushrooms. The steps were super easy to follow and super quick to make – just what I needed. I have to say, it was delicious. And the kids LOVED it. They both cleaned their plates.
Over the next few weeks, I made more new meals – My personal favorite is the Lemongrass-Shrimp Rice Bowls, but the kids love the Beef-Chorizo Street Tacos with Radish Salsa. Mmm. eMeals has really expanded Sam and Zoe’s palettes and they are really enjoying each new meal they try, which makes me happy.
Not only are the meals enjoyable, but the eMeals service is so convenient. I just choose the meals I want to make each week, the ingredients arrive on my doorstep and all I have to do when I come home from work is pull up the recipes from the app on my phone, and follow the clear instructions. It’s super easy for a busy mom like me.
